DIY- The Best Stuffing for in the Bird

Sage Stuffing

(for in a bird)

(18 servings- or fits in about a 12 lb. bird)

1 (12oz) package of stuffing mix

3 Cups of water

1 Onion (large & diced)

4 Celery Sticks chopped

4 Tbl Sage

If you’d like to make out of the bird this recipe works great too.  Just add your turkey dripping to total your liquids to no more than 5 Cups.



Dilly Cucumbers

In a large salad bowl dissolve sugar in white vinegar.


Add cucumbers, onions, and a few sprigs of fresh dill weed.

Variation:  Add 1 Cup of miracle whip for a creamy, delicious dressing.

Eat those veggies!

Dilly Cucumbers Recipe:

3/4 Cup White Vinegar

1 Tbl Sugar

1 1/2 tsp dried dill weed

2 Large onions sliced into rings

6-8 medium to large cucumbers

Variation:  Add 1 Cup of miracle whip for a cream dressing.



French Silk Pie

Sweet creamy chocolate silk pie is SO delicious, nummy!  This will complete any dessert table.  However, my French Chocolate Silk Pie recipe is made with raw eggs and uncooked eggs, which is not recommended for pregnant women, elderly and children.  We make this in our home and wanted to share a great recipe but if you’re looking for a recipe without the hassle of serving raw eggs check out another wonderful recipe of mine:

French Silk Pie

Get out your mixing bowl…


Cream butter and bakers sugar.

Blend in cocoa and vanilla.

Add on egg, then whip for 5 minutes until fluffy, do the same with the remaining 3 eggs.  Slowly adding one at a time and whipping.  Whip until fluffy.

French Chocolate Silk Pie

1 Cup Butter

1 1/2 Cups White Bakers Sugar (finer than regular white sugar)

7 Tbl Unsweetened Cocoa

2 tsp Vanilla extract

1/2 tsp Almond extract

4 eggs

1 baked flaky pie crust

DIY Mouth Watering Buttermilk Biscuits

Mouth Watering Biscuits

Combine flour, baking powder and salt in a bowl.  Cut in Crisco.  When coarse, then add milk and stir with fork then form a ball

On a lightly floured surface place a ball of dough.  Knead 10X to mix in shortening.  Roll out 1/2 inch thick and cut round biscuits out with cutter or a floured mason jar will do the job as well.


2 Cups of sifted Flour

3 tsp Baking Powder

1 tsp salt

1/3 Cup of Crisco

3/4 Cup Milk


Sweet Cocoa Fudge

After taking a nice vacation this past summer, my boys had a knack for making fudge.  We located this little shop and watched a seasoned woman making homemade fudge.  All sorts of flavors, and delicious concoctions for even for the “not- a- fudge- lover” like myself.  Admittedly, she made this amazingly sour fudge, that left a melting sweet & sour smooth fudge melting in your mouth.  Delicious!  We make just about everything homemade, simply because we like it that way and it’s fun to do it together!  Fudge; however, we have made a few times, but the kids wanted to learn how to make their own concoctions.  So we started with this simple recipe.  We’ll share more about our fudge experimenting later.

  This is a rich, sweet chocolate fudge treat.

Sweet Cocoa Fudge

3 Cups of Sugar

2/3 Cup Cocoa

1/8 tsp. salt

1 1/2 Cups Milk

1/4 Cup Butter

1 tsp Vanilla Extract

(Optional to add nuts- 1 Cup of chopped nuts- walnuts is our favorite)

Foil a pan, in a heavy saucepan stir sugar, cocoa, milk and salt.  Bring to a boil over medium heat.  When at a full rolling boil DO NOT until 234 degrees F or until syrup like.  (If you do not have a candy thermometer no worries.  Take a drop on a spoon and drop into cold water- a ball should form.)  Then remove from heat add butter and vanilla.  DO NOT STIR!  Cool to 110 degrees F.  Then beat with a wooden spoon to thicken evenly.  As it begins to loose its gloss, prepare pan.**  Pour into pan.  Cool.  Then cut into small squares.  makes app. 36 pieces of fudge or 1 3/4lb.

**Optional- add 1 cup of nuts into prepared pan (walnuts, pecans or almonds work great).


Happy Waffle Day!!!

Who does not love waffles?  In honor of waffle day, here is a recipe for waffles!!! 

First: beat 2 eggs with 2 Tablespoons of Sugar.  Mix in 1 & 3/4 Cups Milk or buttermilk.  Stir in 1/2 Cup of Oil.  Mix well.  Then whip in 1 teaspoon of vanilla, dash or salt and add in 4 teaspoons of Baking Powder.  Fold in 2 Cups of flour.  Stir and mix until batter is smooth.  Whip to create a light and fluffy batter for delicious waffles.   Add batter into hot greased waffle iron.  Cook until brown.  Best served hot.

Serve with butter and maple syrup, cool whip and fruit, powder sugar dusting OR with cinnamon and sugar sprinkled on top!  Enjoy for breakfast or anytime of the day!  Add toppings to make great desserts as well!  (Ice Creams, marmalades, drizzles, candy sprinkles, etc.)



Green Bean Casserole

Green bean casserole is a hit at any gathering.  We especially enjoy this wonderful dish at virtually any pot luck or get- together!  It is a wonderful filler side dish that goes great with any main course.  Here is this fantastic recipe:

Green Bean Casserole

Mix all ingredients together and place in 3 quart baking dish.  Then stir in 1/2 of the french fried onions.  Save remaining onions for last 5 minutes of baking.

2- 10.75 oz cans of cream of mushroom soup

1 Cup of Half and half

4 Cans of French Style Green beans

(or 8 Cups of fresh cooked beans is best)

*Save remaining onions for last 5 minutes of baking*

XLarge Can of French Fried onions

Bake in 3 Qt. dish for 25 minutes at 350 degrees.  Don’t forget to top with the remaining saved french fried onions.


Angel Sugar Cookies

Find a large bowl.5d4be-bowl

Cream together 1 Cup of Butter, 1 Cup of Powdered Sugar, 1 Cup of Granulated Sugar & 1/2 tsp. of salt.  Mix well.  Add 1/2 tsp. Vanilla

vanilla.pngOkay, maybe a little more… Oh SHHHH… I am addicted to almond extract.  If I have baked treats for you or any of your loved ones it really shouldn’t be a secret I LOVE almond extract, the GOOD STUFF.  It spruces any recipes from great to THEE BEST recipe, seriously!!

almondOKAY, now that is out of the way!  Let’s continue, add 1 Cup of oil.  Mix well.  Beat in 2 Eggs.  Add 3/4 tsp. Baking Soda and 3/4 tsp. Cream of Tartar.  Mix.  Once blended well, add 4 & 1/2 Cups of Flour.  Mix again.  Roll cookie dough into ball, then flatten with a sugar dipped cup.  Bake 350* for 12-15 minutes.

Eat.  Enjoy!



Angel Sugar Cookies

1C. sugar

1/2 tsp. salt

1C. powdered sugar

1C. butter

1C. oil
1/2 tsp. vanilla
2 eggs
3/4 tsp. baking soda
3/4 tsp. cream tartar
4 1/2 C. flour
1. Combine sugars, butter, oil & eggs.  Mix well and even.
2.  To your mixture vanilla, salt, baking soda & cream tartar.  Stir or blend well.
3.  Add flour.  Mix until evenly dispersed and perfectly blended.
4.  Make into round balls & created a flat sugar coated top with a sugar dusted glass or tumbler.
5.  Bake at 350 for 12-15 minutes.

Pumpkin Pie Oatmeal w/ Recipe

Pumpkin Pie Oatmeal

(For 8 servings)


 My kids love oatmeal.  It is super easy to make, inexpensive and healthy.  How many times does that happen and your kids love it?  Okay often here, but we have been blessed with hearty eating children.  However, we love to change it up just for suspense. 🙂  My children eat oatmeal a ton of different ways, I will share more later.  However, their favorite way is:


Boil 5 C. Water (with 1/4 tsp. salt-if desired)

Add to the boiling water 3C. Old Fashioned Oats

Cook 5 minutes on medium heat-stirring occasionally

When oats are done and tender add the following while on low heat:

3 Tbl Butter

2 Tbl Pumpkin Pie Spice

1/2 Cup Brown Sugar

3/4 C OR (Milk to desired thickness)

Stir and remove from heat once your butter is melted.

Eat pumpkin pie oatmeal as is or top with your favorites for a change! 🙂 

Sometimes we also spruce it up with these varieties:

1. Raisins, toss in a cup or two of raisins.

2. Coconut, sprinkle a handful across each bowl of nutritious oatmeal.

3. Walnuts, add 1/2 C. crushed walnuts.

4.  Or as my children love, toss in a small handful of raisins, top with a pinch of walnut bits, sprinkle on some coconut and a dash of cinnamon & sugar.

This is so handy to also mix ahead with Quick Oats if you do the Once a Month Cooking program.  Simply toss everything in a bag and vaccum seal it.  Or a jar and use the sealing lid attachment.  It is ready to crack open and add to the boiling water.  For milk simply add a 2 Tbl of powdered milk to your mix- handy for camping.  OR add milk after when serving. 

Simple. Delicious.
